Abstract

With the objective to assess the sensitivity of demand for poultry meat in broiler in Mexico City, in the face of changes in its main determinants, a multiple linear regression model was used where the demand for poultry meat was the dependent variable and as explanatory the real price of chicken, real price of bovine, real income per capita and population, for the period 1996-2016. The price of the product was inverse and inelastic (-0.009) on the quantity demanded, the real income of the consumer behaved as elastic (1.080), the price elasticity of inelastic meat (0.026) and the population had a direct and elastic effect (3.070) on the demand for poultry meat. It is concluded that the number of consumers had the greatest effect on the sensitivity of the demand for broiler poultry meat in Mexico City and that this product behaved as a normal and elastic property upon entry.
