Una visión actualizada de la ganadería: ¿Quiénes, cómo y cuánto se produce en Uruguay?

Abstract

A través de la información generada por la encuesta ganadera nacional del año 2016 (EGN), el presente trabajo se propuso revisar la situación de los productores ganaderos, poniendo la mayor atención en el grado de desarrollo tecnológico que exhiben en sus sistemas de producción. El análisis de la EGN permitió determinar grupos de productores (clusters) en función de variables definidas, estableciendo su frecuencia relativa y por ende, su importancia (e incidencia productiva) en el total nacional. Mediante la combinación de esta valiosa fuente de información (EGN) con resultados productivos y económicos obtenidos mediante simulación, se evaluaron los clusters así definidos desde el punto de vista productivo y económico, aspectos que la encuesta no contempla. Este relevamiento generó un gran volumen de información muy valiosa acerca de diferentes aspectos de la producción ganadera en el país. A modo de primera entrega, este artículo pone el foco en los sistemas ganaderos que incluyen el proceso de cría (sistemas de cría y ciclo completo).
