Determinação e indeterminação do efeito das classes econômicas na alimentação e no consumo de queijos

Abstract

The present paper starts upon the reflections proposed by Pierre Bourdieu (2006) and Zygmunt Bauman (1999) that opposes, respectively, modern and after‑modern conception on consumption thematic. Its objective is to analyze the degrees of so‑cial differentiation from some alimentary rites and insertion of cheese in feeding. The empirical research next consumers was carried through applications of closed questionnaire in Municipal Markets of Cantareira, Lapa and Santo Amaro, located en São Paulo city, beyond some undertaken in extended social nets. As results, it is distinguished the legitimate partner‑cultural representations on the particularities and quality of the product considered as dependent variable the economic class of the consumer. It intends to establish the differences that show distinctions in terms of economic, cultural and social capital, demonstrating effect of the globalization in feeding as constraints and the displacement of styles of life to domestic environment, what invalidates the Bauman reflections. It is observed that, despite the consumption of this product depends on income, the singularities of quality show to be inverses to social pyramid and, basically, depend on cultural and social capital, being distinguished B and C classes. These validate the structure of position and dispositions over the relation feeding‑food about quality of cheese according to Bourdieu. This conclusion confirms the current dominant devices of cheese market around quality, according to legitimate consumption by Class A and the potentialities of magnifying of the conceptions of quality in this market by B and C Classes.
